Granola and Gourmet® Coconut Oil energy bars

Ingredients for 12 bars:

  • 1 cup peanut butter with chunks of peanuts
  • ½ cup honey
  • ½ cup Gourmet® Coconut Oil
  • 1 cup oat flakes
  • ½ cup quinoa blown
  • 1 cup dehydrated coconut
  • ¼ cup chocolate
  • 2 tablespoons dehydrated bananas
  • ¼ cup chopped Brazil nuts
  • 2 raisins spoons

Preparation:

In a small saucepan over medium heat and warm the Gourmet® coconut oil with the peanut butter and honey, stirring until they blend and soften. Remove from heat.

In a deep bowl add the oats flakes, dehydrated coconut, blown quinoa, chocolate, bananas, walnuts and raisins. Pour over the mixture of peanut butter and Gourmet® coconut oil and stir well. Pour the mixture into a mold; flatten well with your hands or a spatula. Decorate with a few pieces of chocolate and take to the refrigerator, covered with foil for 40 minutes. Cut the bars and enjoy this great food.

Oat Waffles, Gourmet® Coconut Oil and Caramelized Bananas

Ingredients for 8 waffles:

  • 1 and 1/2 cups oatmeal
  • 2 eggs
  • ½ cup vegetable milk
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon brown sugar
  • ¼ teaspoon salt
  • 2 tablespoons fused Gourmet® coconut oil
  • ¼ Gourmet® Control Oil
  • 1 Teaspoon vanilla essence
  • 2 tablespoons cocoa nibs
  • Gourmet® Control Oil

Waffles preparation:

For the waffles break the eggs into a deep bowl, add the vegetable milk, vanilla essence and the fused Gourmet® Coconut Oil and stir well with a wire whisk. Add the oatmeal, cinnamon powder, baking powder, brown sugar and salt, mixing until homogeneous preparation and without lumps. Let stand 30 minutes. Heat the waffle machine and grease with the Gourmet® Control oil, pour half of the mixture, garnish with the cocoa nibs and cook until golden. If you do not have a Waffle machine in your house, you can try to make this recipe in a frying pan and it will be equally delicious.

Ingredients for caramelized bananas:

  • 2 ripe bananas
  • 1 and ½ tablespoons ofGourmet® coconut oil
  • ½ cup brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ cup water

Preparation of caramelized bananas:

In a medium-low heat pan and warm the Gourmet® Coconut Oil and add the bananas cut into slices. Add the cinnamon, water and sugar, stir and cook for a couple of minutes. Add the fire and cook until the bananas are caramelized, about 5 minutes. Serve them hot over the waffles.

Chicken fried with coconut

Ingredients for 4 servings:

  • 4 skinless chicken breast fillets
  • 1 cup Gourmet® Coconut Oil
  • 1 cup of bread crumbs
  • 1 cup dehydrated coconut without sugar
  • 2 eggs
  • 2 tablespoons Dijon mustard
  • Salt and pepper

Fillets preparation:

CCut the chicken breast fillets into pieces or strips 2 centimeters wide and season with salt, pepper and Dijon mustard.

Serve breadcrumbs and dehydrated coconut in two separate containers. In another deep bowl beat the eggs.

Pass the chicken through the egg, then through the bread crumb again through the egg and finish with the coconut. Repeat the operation with all the pieces and reserve in the refrigerator for one hour. In a thick-bottomed pan, heat the Gourmet® Coconut Oil. Fry the chicken until it brown on all sides.

Ingredients for the sauce:

  • ½ cup Dijon mustard
  • 3 tablespoons of honey
  • 1 sprig of rosemary

Preparation for the sauce:

For the sauce heat the honey along with the rosemary, before it boils off the fire and leave for a few minutes to be flavored. Remove the rosemary, mix with the Dijon mustard and serve on the chicken.

Shredded sweet potato fritters balls with homemade dried tomatoes mayonnaise

Ingredients for 15 – 20 fritters:

  • 2 potatoes or sweet potatoes
  • ¼ cup Gourmet® Coconut Oil
  • 1 egg
  • ¼ cup of wheat flour
  • ½ teaspoon spicy paprika
  • 1/4 teaspoon garlic powder
  • 2 teased sprigs of thyme
  • ¼ teaspoon salt

Preparation:

Preheat the oven to 180 ° C. Wash the sweet potatoes and cook in the oven until softened for about 30 minutes. You can also boil them in water for about 12 minutes, they should not be very soft. Remove the skin and grate with the thick part of the grater. Heat the Gourmet® Coconut Oil in a frying pan over medium heat and add half the streak of the sweet potatoes, reserve the rest. Add the egg, wheat flour, spicy paprika, garlic powder, salt and thyme leaves, and mix well.

Remove small portions and separate into an ovenproof dish. Pour over a small amount of the Gourmet® Coconut Oil that you previously heated in the frying pan and bake until golden.

Preparation dried tomato mayonnaise:

  • 2 egg yolks
  • 2 tablespoons red or white wine vinegar
  • The juice of ½ lemon
  • 1 tablespoon of salt
  • ½ cup dehydrated tomatoes
  • 2 cups Gourmet® Olive Oil
  • 1 pinch of sugar
  • Salt and pepper
  • Mustard to taste

Preparation of dried tomato mayonnaise:

For the dried tomatoes mayonnaise put the yolks, mustard, lemon juice, sugar, vinegar and tomatoes in the blender. Turn the blender low and pour the Gourmet® Olive Oil in the form of a string until the ingredients are emulsified and the mayonnaise is formed. Season with salt and pepper.

Brownies with Peanuts and Gourmet® Coconut Oil

Ingredients for 6 brownies:

  • ¾ cup dark chocolate cut into pieces
  • ¾ cup Gourmet® Coconut Oil
  • ¾ cup white sugar
  • 1 cup brown sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • ¾ cup of wheat flour
  • 1 cup unsweetened cocoa
  • ½ teaspoon of salt
  • ½ baking soda
  • ¼ cup peanuts with salt
  • Powdered sugar for decoration
  • Gourmet® Oil Control quantity needed

Preparation:

Preheat oven to 170°C. Grease mold with Gourmet® Control oil on all sides.

Melt the chocolate in a double boiler following these steps:

  1. Heat a cup of water in a pot until it boils.
  2. Put a bowl on top and prevent water from entering this bowl. Add chocolate and Gourmet® Coconut Oil, stir with a spatula until the two ingredients are completely melted, let it cool slightly.

Separate mixture with wire whisk eggs, white sugar, brown sugar and vanilla essence. Pour molten chocolate and stir well. Incorporate the cocoa, flour, salt and baking soda and stir until the ingredients are well integrated.

Transfer the mixture to the mold, distribute the peanut over the top and bake for about 35 minutes or until the tip of a toothpick or knife comes out clean when inserted. Allow to cool completely before cutting and unmolding. Garnish with powdered sugar.
