Catalina Muñoz, chef and owner of the patisserie Marie Antoinette, tells us her story of love and chemistry for the pastry shop that has been going for more than 6 years. Preparation for 20 people
For the Salpicón
(Colombian fruit salad with juice)
- 1 pineapple
- 1 papaya
- 4 mangos
- 12 to 15 oranges
Cut the fruits into squares of more or less than 1 centimeter. In a bowl or deep bowl, squeeze the oranges and add the fruit. The next step is to refrigerate for at least an hour to macerate the fruit so that they can release their entire flavor.
For the migas paisas
(fried arepas with egg)
For this traditional recipe you must cut the arepas in triangles of 2 centimeters. At that same moment the oil is heated and once it will be hot, the arepas are fried until they are golden brown and crisp. You should immediately stir the onion and tomato to achieve a classic “hogao” (colombian seasoning sauce). The next step is to beat the 30 eggs in a bowl, add the fried arepas and mix very well. Finally add the “hogao” to the mixture to prepare the scrambled eggs to the point of your preference (wet or dry) and serve the portions to enjoy.
For strawberry dessert
- 2 kg. of strawberries
- 150 ml. of honey
- 1 liter of cream of milk
First of all, you have to wash and clean the strawberries well. Once this process is done, bring the strawberries to a deep bowl, add the honey, mix and refrigerate for a 1/2 hour. For the cream of milk, we must beat it a little so that it takes air and a consistency very similar to whipped cream. Now, just serve the strawberries in the desired portions, add the cream to taste and have a sweet moment with the guests.
